George T. Bagby State Park & Lodge Business Plan
Located in southwest Georgia on the shores of Lake Walter F. George (also known as Lake Eufaula), this resort park features a 60-room lodge, conference center and cottages. The Pilot House Grill Restaurant provides a courtesy dock for boaters who want to enjoy meals in the park, and the conference center is an affordable setting for weddings, reunions, meetings and retreats.
A marina, boat ramp and beach offer easy access to the 48,000-acre lake for fishing, boating and swimming. Anglers will be excited to learn that the state record blue catfish was captured in Lake Walter F. George in 2010. The large picnic shelter and numerous picnic sites are perfect places for families to enjoy their catch. Visitors may also look for wildlife along the three-mile nature trail, which journeys through hardwoods and pines.
The park's executive chef has been selected to compete in the 2013 Vidalia Onion Festival's annual Golden Onion cooking competition. The cookoff will be held in Vidalia on April 14. Park guests can sample his Onion, Apple and Goat Cheese Popover on Sunday lunch buffets between now and the competition.
Sweet Onion, Apple & Goat Cheese Dessert Popover:
1 Large Onion Rough Diced
2 ½ Cup Flour
2 Cups Liquid Eggs
4 oz Softened Cream Cheese
1 cup Brown Sugar
2 Tbsp Butter
2 Red Apples – peeled and ¼” diced
1 Cup Crumbled Goat Cheese
Sauté onions in butter until lightly browned. Set aside and cool. Using an emersion blender, mix eggs, cheese, brown sugar, onions and flour until smooth. Fold apples into mixture. Pour into silicon muffin pan and bake at 350 degrees for 15minutes or until knife comes out clean. Garnish with orange sabayon sauce.
Orange Saboyon Sauce:
2 Cups Liquid Eggs
1 Cup Brown Sugar
1 Tbsp Vanilla
½ Cup Orange Juice
Mix all ingredients together in a double boiler. Continue to whisk until the sauce thickens and lines are left in the sauce.
